Mom’s Chili and Corn Bread Recipe

With the weather getting colder, I thought it was the perfect time to share my mom’s super easy chili and corn bread recipes!  There’s nothing like a warm pot of chili simmering on the stove and the smell of corn bread in the air to warm you up!

They are both easy recipes.  When we made it last week, my 10 year old son made the corn bread all by himself!

Chili Recipechili

1 to 1½ pounds of browned hamburger

1 can of dark red kidney beans

1 can Chili beans – mild

1 can red beans or butter beans

1 can diced tomatoes

1 package Chili seasoning

1 48 oz can of V8 tomato juice


Combine all ingredients.  Heat to boiling and simmer.



Easy Corn Bread

1 ¼ c flour

¾ c yellow corn meal

¼ c sugar

2 tsp baking powder

½ tsp salt

1 c milk

¼ c vegetable oil

1 egg – beaten


Grease 8 or 9 inch baking pan.  Heat oven to 400.

Combine dry ingredients.  Stir in milk, oil, and egg, mixing until dry ingredients are moistened.  Pour into prepared pan.

Bake 20-25 minutes or until golden brown.  Serve with butter and honey if desired.
