Golf Ball Soup

golf ball soupHere’s a traditional Christmas Eve recipe for our family – Golf Ball Soup!

I know that it sounds funny but it’s great and I can’t imagine a Christmas Eve without it!

Here’s how you make it:

Golf Balls –

1 package of hamburger buns

2 eggs

1 stick of butter


Crumble the buns very fine.  Mix eggs and butter.  Mix well with buns and form into small balls. Makes around 22 balls.

Cook a chicken in salted water until meat is tender (1 – 1.5 hours) or cook chicken breasts as an alternative.  Precook 1 cup of dry rice.  After the chicken is cooked, cut the chicken into small pieces.  Add one large (46 oz ) can of chicken broth.

Pour all the broth into a large pot.  Add rice and chicken.  Heat to boiling.  Add golf balls and cook 4-5 minutes.

We always have this simmering on the stove or in a crock pot so it’s ready for us when we get home from Christmas Eve mass.  Then we eat it with fresh homemade bread!
