Blueberry Struesel Muffins

The kids and I went berry picking last week and came home with 10 pounds of blueberries and full bellies!  We froze quite a bit of them, ate fresh ones by the handful and then did some baking with the rest.  We found a yummy recipe for blueberry streusel muffins.  Check it out and try it if you have some freshly picked blueberries too!

Muffins:

1 cup milk

1/4 cup vegetable oil

1/2 tsp vanilla

1 egg

2 cups flour

1/3 cup sugar

3 tsp baking powder

1/2 tsp salt

1 cup (or maybe a little more) fresh blueberries

 

1. Heat oven to 400 degrees.  Line muffin tin with muffin cups.

2.  Beat milk, oil, vanilla and egg in a large bowl.

3. Stir in flour,  sugar, baking powder and salt just until batter is moistened

4. Fold in blueberries

5. Divide batter among 12 muffin cups

 

Streusel Topping:

2 Tbsp butter

1/4 cup flour

2 Tbsp packed brown sugar

1/4 tsp ground cinnamon

 

Cut margarine into flour, brown sugar and cinnamon using a pastry blender until crumbly.

Sprinkle each muffin with 2 Tbsp of topping.

Bake for 20-25 minutes.
